That story belongs to Patchara "Annie" Beck, our co-owner and chef, whose love for authentic Thai food has shaped this family-owned restaurant into a local treasure.
Annie’s culinary roots stretch back to her childhood, where she learned the art of Thai cooking from her grandmother. In their village kitchen, surrounded by the aromas of lemongrass, galangal, and fresh chilies, Annie mastered recipes passed down through generations. Her grandmother’s hands-on lessons—grinding spices by mortar, balancing flavors with precision—instilled a deep respect for tradition that still guides Annie today. Those early days weren’t just about food; they were about family, community, and the joy of sharing a meal.
As a young woman, Annie took her skills to Chiang Mai, a bustling city in northern Thailand known for its rich food culture. There, she ran her own restaurant, refining her craft amid the vibrant markets and diverse palates. From perfecting the creamy, curry-laced Khao Soi to rolling fresh spring rolls with care, she built a reputation for dishes that felt like home. But her dream didn’t stop there—she wanted to bring those flavors to a new community.
That dream became Anchan Thai. Alongside her family, Annie opened this Longmont gem, blending northern Thai heritage with Colorado hospitality. Her passion goes beyond the kitchen: she sources ingredients from Thai farmers, supporting the land that raised her, and offers vegan and gluten-free options to welcome all.
